 Jumping beans chilli

Ingredients

  • Minced beef 250 grams
  • 1 red pepper
  • 2 garlic cloves
  • Tin kidney beans 400 grams
  • Black eye beans 400 grams
  • 1 onion (medium)
  • Fresh chilli ½ red or ½ tsp chilli powder (add more for taste, or omit for small children)
  • Ground cumin 1 tsp  
  • Paprika 2 tsp
  • 1 beef stock pot or cube
  • Tin chopped tomatoes
  • Water 150 ml

Method

  1. Chop up the peppers, onion, garlic (and fresh chilli, if using)
  2. Heat 1 tbsp oil in the pan. Add chopped ingredients.
  3. Cook on med heat for 2 min
  4. Add minced beef
  5. Mix together when meat is browned. Add cumin, paprika (and chilli powder, if using)
  6. Stir well until spices have mixed in, then add tin tomatoes, kidney beans, black eye beans, stock, and water.
  7. Heat till almost boiling. Turn down heat - simmer for 15 - 20 min. Should be nice and thick - if not cook a little longer.
