Jumping beans chilli
Ingredients
- Minced beef 250 grams
- 1 red pepper
- 2 garlic cloves
- Tin kidney beans 400 grams
- Black eye beans 400 grams
- 1 onion (medium)
- Fresh chilli ½ red or ½ tsp chilli powder (add more for taste, or omit for small children)
- Ground cumin 1 tsp
- Paprika 2 tsp
- 1 beef stock pot or cube
- Tin chopped tomatoes
- Water 150 ml
Method
- Chop up the peppers, onion, garlic (and fresh chilli, if using)
- Heat 1 tbsp oil in the pan. Add chopped ingredients.
- Cook on med heat for 2 min
- Add minced beef
- Mix together when meat is browned. Add cumin, paprika (and chilli powder, if using)
- Stir well until spices have mixed in, then add tin tomatoes, kidney beans, black eye beans, stock, and water.
- Heat till almost boiling. Turn down heat - simmer for 15 - 20 min. Should be nice and thick - if not cook a little longer.
